Guardian is definitely a good class to start with. It is the most versitile class now in GW2. However for the long run the startiing class doesn't matter much, as you'll be earning enough gold to make yourself a new fully leveld and geared character every few months. The difficulty is also very subjective.
This can/will change very soon probably. WvW - Guardian. Best support for zerg fights, Dragonhunter/core for dps and celestial willbender is very strong as a duelist/roamer. But at the end it depends on how you want to play a certain gamemode. For a example, if you only roam in WvW many more classes are "meta".
Every class has a good dps build so you cant go wrong with any. I personally recommend Spellbreaker. Its only Power but its easy to play and does really big damage and has high cc. The hard part is you have to be melee but if you like seeing big numbers, Spellbreaker could be a good easy option. 18.
At lever 60 you'll get into the current expansion capping at 70 where current gne game is. I'd recommend picking a server wisely, high pop servers are generally a good choice and are usually heavy one faction vs the other (like litterally 90%+ one faction) so know which to pick for the server.
